My mom also has dementia and can't sit still for dental work. She lost a crown but the tooth wasn't infected. My dentist referred me to a dentist with hospital privileges, who specializes in special needs patients. Unfortunately, they were still unable to get any work done, even when Mom's doctor prescribed something to calm her. The dentist said they would need to put Mom under general anesthesia to do the work. Mom has many other health issues that warrant not going under general anesthesia if possible. Her doctor and I came up with an even list of pros and cons for going under anesthesia and we decided, since there is no infection, to do as little as possible for as long as possible. So far, so good but she will need the dental work at some point.

I have the same issue with my wife. I decided to just let it be. Yes,, it is a tough decision but I completely inderstand your thoughts.
