I need someone who can come in and stay with my wife when I need to be away for a few hours.

There are agencies, like Visiting Angels, you can call and discuss your needs and get a cost estimate. You can hire a private person which may seem less expensive, but makes you an employer and you would need to do your own back-ground checks. You can look into Memory Care Adult Day Care, or if you are a member of a faith-based community you can see if there's a care ministry. You can also contact your local area's Council on Aging as they are the epicenter of multiple resources and information.

I've been told but haven't verified it that our county provides respite care with hired individuals, apparently selected and paid for by the county.

The county also has a fairly extensive list of companies that focus on elders and provide varying types and levels of service.  

If you hire a commercial private care company, you'll probably find that they require stints to be at least 3 or 4 hours, which would cost you more even if you don't need help for that long of a period of time. 

Care would also depend on the mental and medical status of your wife, and what her needs might be.
